How to make
To make the dough, first, mix the flour and salt in a deep bowl. We make a small well in the middle and pour the water. Add sugar, dry yeast and olive oil.
Without waiting we knead a delicious soft pizza dough. We return it into the bowl, cover it with a towel or cling film and let it rise for 30 min. I personally turn on the oven at 120°F (50°C) and let it rise there when it doesn't take hours.
We make pizza sauce by mixing tomato juice with salt, black pepper and dry spices* - oregano, thyme, parsley, tarragon, a pinch of sugar. Mix well and the sauce is ready.
Cut the olives and mushrooms into slices. Grate the cheese and cut the ham into cubes.
We go back to the dough, which we remove from the bowl and knead very lightly for a minute or two. We divide it into 5 balls of equal size. From each ball we roll out a normal pizza crust, which we immediately transfer to baking paper so that it does not stick.
Pierce small holes on the pizza dough with a fork. This will prevent the dough from stretching during baking. We put some of the sauce on only one side of the homemade pizza. That is, we leave the other dry.
Spread the cheese on top of the sauce, then the ham, then the olives and the mushrooms. Cover with the dry side and lightly wet the edges with water to make it stick. We press them with a fork to make it look better.
Bake in a preheated oven at 390°F (200°C) for 15 minutes or until it acquires a golden color. After baking, sprinkle with savory herb or oregano and serve the calzone pizza.
