  • bacon - 15 thin strips raw
  • bacon - 3.5 oz (100 g)
  • soy sauce
  • olive oil

  • black pepper - 1 tsp.
  • mustard - 1/2 tsp.

How to make

The first thing we do is wash our rabbit well and dry it with kitchen paper.

Cut the rabbit giblets into small pieces, as well as the bacon.

Stew the onion in a pan in which we have poured more olive oil.

We add the chopped giblets and the bacon to it and stir well until completely fried.

Add the rice and stir again, then pour 1 cup of water, add the thyme and leave for a second or two.

After removing from the heat, add salt and black pepper to taste.

We fill the rabbit with the mixture and sew it up, and distribute the other part in the baking pan.

In a bowl, mix the soy sauce, olive oil, garlic, paprika, flour, mustard and salt to taste and mix well.

A thick paste is obtained, with which we spread the rabbit.

We take the strips of bacon and arrange them on the rabbit and let it rest.

We take a rectangular baking pan, pour the mixture, put the rabbit, add the remaining stuffing, pour 2 cups of water and the wine.

Before putting it in the oven, we wrap the baking pan with the stuffed rabbit in foil and put it in the oven, baking for about an hour to an hour and a half.

After the time is up, we remove the foil and bacon, place the baking pan back into the oven to finish cooking the Stuffed Rabbit with Rice and Bacon.
