Ingredients

  • rabbit - 1 pc. with the offals
  • rice - 3.5 oz (100 g)
  • onion - 2 onions
  • soy sauce - 1 tbsp.
  • parsley - 3 sprigs
  • savory herb - 2 pinches
  • salt
  • oil - 2/5 cup (100 ml)
  • paprika - 1 tbsp.
  • mushrooms - 7 oz (200 g)
  • smoked meat - 5.3 oz (150 g)
  • black pepper - 1 pinch

How to make

The rabbit is washed and salted inside and out. The washed offals are cut and fried with the chopped onion in the heated oil, until the onions soften.

The cleaned rice is boiled, until it's semi-cooked and it is added to the offals, the chopped mushrooms, the diced smoked meat and all the spices are added.

This stuffing is fried, until it's ready to eat. The rabbit is stuffed with the help of a spoon and it is sewn up. It is roasted in an oblong baking pan, in which water is poured up to the middle and it is covered with foil.

After 2 hours, the foil is removed and the stuffed rabbit is roasted for 15 minutes, until it aquires a golden crust.

When there is some of the stuffing left, which cannot fit in the rabbit, after removing the foil, I add it on the side of it to bake.
