Ingredients

  • For the Homemade Yogurt
  • fresh cow's milk - 4 cups (1 L)
  • yogurt - 2 tbsp. with a tip (homemade if possible)
  • More
  • raspberries - 3.5 oz (100 g) fresh
  • chia - 1 tbsp.
  • honey - 4 tbsp. or to taste (agave syrup or other sweetener can also be used)
  • cocoa biscuits - 10 - 12 pcs.

How to make

Boil the milk in a water bath and let it cool, so that you can touch it without burning yourself. If you have a kitchen thermometer, measure with it until it reaches 100°F (37°C).

In a separate container, put the yogurt (it is best if it is at room temperature) and pour two or three ladles of the warm boiled milk into it. Stir until smooth and pour it into the pot with the rest.

Mix perfectly and fill clean and dry jars. Close with lids.

Wrap them with two or three blankets and leave them in a warm place for 8-9 hours.

When the yogurt is ready, strain it in cheesecloth for a few hours. Check and choose how thick you like it to be, so that it has a nice thick cream consistency.

Mix with sweeteners of your choice. If your yogurt is more sour, add more sweetener, as raspberries are also sour and it will not be good for the strained yogurt to sour as well.

Refrigerate the strained yogurt to cool thoroughly.

Now is the time to prepare your dessert, by preparing small jars or cups for this purpose. Add a layer of strained yogurt, a layer of raspberries and another layer of sweetened strained yogurt. Add biscuits on top, more raspberries and sprinkle with chia. If desired, you can also sprinkle a layer of crushed biscuits on the bottom of the cups.

Cool the dessert again before serving.
