How to make
From the meat, make 4 large patties. Thin them out well with a hammer and sprinkle with salt and pepper. Cut the onion into slices, mix them with the diced smoked pork belly. Spread it over the meat patties.
Wrap them into rolls and tie them up with white thread. Arrange the rolls in a baking dish in which you have heated the lard. Fry them lightly on all sides. Beat the flour in the wine, tomato paste and mustard and pour it over the pork rolls.
Add the garlic, butter and salt to taste. Cover the tray with aluminum foil and bake in the oven at 300°F (150 °C).
