How to make
Mix the oat flour, yeast, oat bran, 1/2 cup white flour, the honey and milk. Stir well and leave with a lid on top for 20 minutes in a warm place. Then add the remaining flour, salt and water.
Knead the dough for a few minutes and near the end, add the oil. You need to get a smooth and elastic dough. If you get a dough that's too thick, add a little more water. Put the dough in a greased bowl, cover and leave it in a warm place to rise for an hour and a half.
Divide the risen dough into 6-8 pieces and shape them into balls. Arrange them on a tray with baking paper. Let them rise for 30 minutes. Sprinkle the pitas with sesame seeds and other seeds if desired, sprinkle lightly with water and put them to bake in a preheated 360°F (180 °C) oven.
