How to cook
Clean the inside of the fish and wash it. Cut it into slices 3/4″ (2 cm) thick. Add salt, sprinkle it with black pepper and cook on a moderately preheated grill.
Sprinkle the grilled fish with finely chopped parsley. To prepare the sauce, first grind the walnuts. Rub the garlic with salt, add black pepper, finely chopped parsley, vinegar, the chili peppers and the rest of the vegetable oil.
Pour on a glass of hot water over the mixture, add the ground nuts and mix. Serve the fish hot, with the walnut sauce poured over it and garnished with boiled potatoes, covered with melted butter and sprinkled with finely chopped parsley.
