"Fish with an extravagant butter sauce - one of the yummiest fish specialties from Polish cuisine."

Ingredients

  • fish fillet - 2 lb (1 kg), of white fish
  • carrots - 2 oz (50 g)
  • celery - 2 tbsp (30 g)
  • onions - 1.5 oz (40 g)
  • bay leaf - 1
  • black pepper - 1/5 tsp (1 g)
  • salt - 2 1/3 tsp (12 g)
  • vinegar - 1 tablespoon
  • parsley - 2 tbsp (30 g)
  • lemons - 1
  • eggs - 4 egg yolks
  • lemon juice - 1 tablespoon
  • butter - 2/5 cup (100 g)
  • broccoli - for garnish
  • potatoes - for garnish

How to make

Boil water in a suitable container. Add round carrot slices, shredded celery, finely chopped onions, bay leaf, black pepper and salt. Once the marinade comes to a boil, place the fish to boil for 15-20 minutes. To prepare the sauce, beat the yolks in a round-bottomed dish and put them in a water bath over low heat.

Pour in the fish broth and once the mixture becomes a creamy paste, remove from the fire. Trickle the melted butter in. Salt the sauce and add the lemon juice. Then place the boiled fish in a suitable platter, top with the sauce, arrange slices of lemon on it.

Serve garnished with boiled potatoes and broccoli.
