How to make
Boil 1 liter of water with salt in a pot on the stove. Meanwhile, clean the onion, mushrooms and spinach. Finely chop the onion, the mushrooms into crescents and the spinach into small pieces.
Once the water boils, add the rice. Boil until it's fully cooked or about 25 min. Strain and leave it to stew under the lid. Meanwhile, heat the oil in a deep pan on the stove at a moderate temperature and fry the onion for about 2 minutes.
Add the mushrooms and fry for about 15 minutes, stirring occasionally. Season with ginger and soy sauce. Fry for another 5 minutes and add the spinach.
Fry for another 5 minutes and add the rice. Stir well to combine the ingredients and remove from the heat. Use this Fried Rice with Spinach and Mushrooms as a side dish or eat it as a lean meal.
