How to make
The first step in making these chocolate candies is to pit the cherries and cut them into small pieces.
Choose hard cherries that can be easily sliced without becoming mushy.
Put the ricotta in a bowl, add the honey and mix.
Add all other ingredients and the cherries and mix the candy mixture with a spoon.
Let the mixture sit for 10-15 minutes and then form small balls and place them on a tray.
Place the candies in the freezer for 30 minutes to cool and harden.
Melt the chocolate and butter in a bowl over a water bath.
Dip each candy into the chocolate glaze and arrange them on top of parchment paper.
Since the candies are chilled, the chocolate hardens quickly, but it's okay to put them back in the fridge for another 30 minutes.
