How to make
First, knead the dough by putting the sugar, milk, water and yeast in a bowl. Beat with a wire whisk, close the bowl with a lid and leave it for 5-6 minutes for the yeast to activate.
Then add the butter, oil, salt and start adding the sifted flour little by little and kneading. Knead a soft, non-sticky dough, which is covered in a bowl with a dry cloth and leave it to rise for about 40 minutes.
After it has risen, knead it once more to remove the air, tear off the dough and form balls the size of a tangerine. Prepare a mixture of pekmez and water and put the sesame seeds in a separate container.
Roll out each ball of dough slightly into a circle and put a piece of white cheese or yellow cheese and close it by pinching the edges well with your fingers. Dip first in the pekmez mixture and then roll in the sesame seeds.
Arrange (with the closed part at the bottom) in a tray lined with baking paper or on the oven rack lined with paper.
Turn on the oven at 370°F (190°C). We make 2-3 diagonal slits with a sharp knife on each sesame bread bun. Bake in an oven preheated to 370°F (190°C) for 25-30 minutes.
You can also make simit bread from this dough by making two strips and twisting them, dipping them in the mixture of pekmez and sesame seeds and bake.
