Ingredients

  • milk - 10 fl oz (300 ml)
  • fresh yeast - 0.7 oz (20 g)
  • sugar - 1 tbsp.
  • yogurt - 4 tbsp.
  • baking soda - 1/2 tsp.
  • eggs - 1
  • oil - 4 tbsp.
  • salt - 1 tbsp.
  • flour - about 1.3 lb (600 g)
  • white cheese - about 9 oz (250 g) feta
  • for spreading
  • egg yolks - 1 pc.
  • milk - 1 tbsp.

How to make

11 pieces are made out of this dose. The pretzel wreaths are quite large. You can knead half a dose.

Warm the milk slightly and add the sugar, yeast and 2 tbsp. flour. Let it activate.

Sift 1.1 lb (500 g) of flour into a bowl and add the salt.

Mix the yogurt with the soda. Then add the egg and beat with a fork. Add the oil.

In the bowl with the flour, pour the yeast and the yogurt mixture. Knead the pretzel dough. It gets pretty sticky at first.

Pour the dough onto a floured surface. Gradually and in stages, add the remaining 3.5 oz (100 g) of flour. Put the dough in a suitable bowl and cover it. Let it rise for 30-40 minutes.

Shape the risen dough into 1.7 oz (50 g) balls and cover them with cling film. Let them rest for 10 minutes.

Next up is the shaping. Grab two balls. First you form them into 12″ (30 cm) long strips. Then you spread them with your fingers. Add the cheese and cover both sides well.

You braid the two strips, then form them into a circle. Arrange the braided pretzels on a baking tray covered with parchment paper.

Cover them with a towel and let them rise for 30-40 minutes.

Before baking, beat 1 yolk with 1 tbsp. milk and spread them. I sprinkled sesame seeds on top.

Bake the pretzel wreaths with white cheese and sesame seeds at 360°F (180°C) for about 30 minutes.
