Ingredients

  • flour - 1.1 lb (500 g) + for additional kneading
  • water - 10 fl oz (290 ml)
  • olive oil - 1 1/3 tbsp (20 ml) + for spreading
  • sugar - 0.5 oz (15 g)
  • salt - 0.35 oz (10 g)
  • fresh yeast - 0.7 oz (20 g)
  • mozzarella - 5.3 oz (150 g) fresh
  • chilli peppers - 2, dried
  • butter - 0.5 oz (15 g)
  • parsley - 1 - 2 sprigs
  • garlic - 2 cloves

How to make

Dissolve the yeast in half of the water slightly warmed to body temperature. Pour the sugar, mix and let it activate for 7-8 minutes in a warm place, by covering the bowl with a towel.

Sift the flour into a bowl and make a well. Pour the remaining warmed water, olive oil, salt and yeast into it. Knead a smooth, non-sticky dough, adding flour if necessary.

Turn on the oven to heat up to 140°F (60°C) and place a heat resistant container inside with water to generate steam.

Roll out the dough into a round crust, relatively thick and spread it with olive oil. Slice and arrange the mozzarella in the center. Spread one clove of garlic on it - crushed or finely grated, you can add more if you wish. Crush the dried chilli peppers as well. Add more of them if you prefer it very spicy.

Fold the edges of the crust in towards the center and turn the round ball of dough over. With a knife, make shallow cuts on the surface with shapes you want.

Place the bread in a baking pan with a diameter of 9″ (23 cm), greased or covered with baking paper. Put it in the oven, in which steam has already been generated, and leave it to rise for about 25-30 minutes at 140°F (60°C).

Without opening the oven, increase the temperature to 390°F (200°C) and bake for 25 minutes or until dark golden brown.

Spread the finished bread with a paste prepared from the butter, the other crushed clove of garlic and finely chopped parsley. Let it cool on a wire rack and serve it.
