  • cucumbers - 1.5 pcs.
  • tomatoes - 3 pcs.
  • peppers - 1 red + 1 yellow
  • lemon juice - 2 tsp.
  • olive oil - 1 tbsp.
  • garlic - 1 clove
  • coriander - 1.5 tbsp.
  • black pepper - 1 tsp.
  • salt
  • for the garlic bread slices
  • olive oil - 2 tbsp.
  • garlic - 2 cloves
  • bread - 12 slices of baguette

How to make

To make the cold soup, peel and slice the cucumbers, tomatoes and peppers along with the lemon juice and olive oil and blend them.

Transfer to a bowl and refrigerate for at least 1 hour. Make the bread slices. Preheat oven to 390°F (200 degrees). Put the sliced baguette in a tray and sprinkle it with olive oil.

Bake them for 10-15 minutes, turning them once. Spread the garlic on them and serve with the cooled gazpacho.
