"Delicious croquettes to serve with your favorite sauce of your choice"

Ingredients

  • spinach - 1.1 lb (500 g)
  • spring onions - 3 stalks
  • garlic - 2 - 3 cloves
  • white cheese - 10.5 oz (300 g) feta
  • yellow cheese - 5.3 oz (150 g)
  • eggs - 2
  • fat - 1/2 cup
  • parsley - 1 bunch
  • flour - 3 tbsp.
  • yoghurt

How to make

Wash and chop the spinach. Clean the onion and garlic and finely chop them. In a suitable pan, heat the fat and stew the vegetables briefly.

Remove the pan from the heat, strain the liquid and cool them.

Add the grated feta cheese, eggs and flour. Add the finely chopped parsley.

Mix everything until a smooth mixture is obtained. Line the baking pan with baking paper.

Drizzle with a little oil. Shape the croquettes and put them in a heated oven.

Five minutes before the end of baking, sprinkle generously with grated cheese.

Bake until golden. Serve the dish warm with yogurt.

The oven-baked croquettes with spinach, white cheese and yellow cheese are ready.
