How to make
Melt the butter and cook about 1.6 oz (45 g) of flour in it. Pour in the milk and cook for approximately 5 minutes, stirring constantly, until the bechamel thickens.
Set aside and add the finely chopped cooked chicken, the cottage, parsley, and grated yellow cheese.
Mix all the ingredients together and chill in the fridge.
Once chilled, shape the croquettes with your hands. Roll in flour, dip in the whisked egg and roll in breadcrumbs.
Arrange the croquettes on a plate and cover with cling film. Chill again for 15 minutes.
Heat the oil in a pan and fry.
