Ingredients

  • rice - 1 cup
  • leeks - 4 - 5 sprigs
  • fresh mushrooms - 10.5 oz (300 g)
  • olives - 5.3 oz (150 g)
  • tomatoes - 2 tbsp. (from a tin)
  • paprika - 1 tsp.
  • oil - 3 1/3 tbsp (50 ml)
  • salt
  • black pepper
  • curry
  • spearmint
  • parsley

How to make

Coarsely chop the leeks. Put them to stew with the oil. Once they become soft and transparent, add the washed rice and stir continuously.

Once the rice is fried, add the mushrooms and canned tomatoes. Add two cups of warm water.

Stir and add the spices and salt to taste. Leave everything on the stove for a few minutes.

Pour the rice into a baking pan. Arrange the olives on top and pour with another glass of warm water.

Put the dish in a heated oven at 390°F (200°C) for about 40-50 minutes, until the rice is ready.

If necessary during baking, you can add a little more water. Great vegan rice dish!
