How to make
In a deep pan, heat the olive oil and fry the rice, until it becomes translucent. Add the chopped leeks and mushrooms.
Fry for another 5 minutes, by stirring the dish at all times. Pour the warm vegetable broth.
Season with a pinch of black pepper and parsley. Cover the pot and stew the dish, until the rice has absorbed all the liquid.
Towards the end of cooking, add the olives and stir the dish.
Serve the pan-fried rice warm with chopped parsley!
