How to make
Boil the peas according to the instructions on the package or a few minutes longer than indicated to make them perfectly soft.
Allow them to cool as they are in the boiling water and only then strain them. We do this, because if you strain them beforehand, they may wrinkle and their skin may dry out. So cooling down will take a little longer, but it's worth it.
With the strained peas, add the garlic, parsley, avocado, mustard, cream cheese, as much salt as you like, milk, olive oil and the juice of one lemon.
Blend to the desired consistency.
The puree becomes thick, so if you want, you can dilute it with a little more milk.
Serve it chilled or at room temperature by placing a teaspoon of strained yogurt on each portion and sprinkle it with chia seeds for a crunchy finish.
This puree is so delicious that you will fall in love with it! It can be eaten on its own or served as a dip or spread in the company of toasted slices of bread.
