Ingredients

  • rye flour - 2.8 oz (80 g) + for additional kneading
  • wheat flour - 11 oz (320 g)
  • water - 1 1/5 cups (270 ml)
  • salt - 1 tsp.
  • oil - 1 tbsp.
  • fresh yeast - 0.7 oz (20 g)

How to make

Dissolve the yeast in the slightly warmed water. Stir well, so that it can dissolve. You don't have to wait for it to activate.

Mix the flour with the salt in a bowl. Make a well and pour the liquid ingredients into it - oil and water with yeast.

Knead a smooth and soft dough, by sprinkling more rye flour until it stops sticking to your fingers.

You can also knead it in a food processor for 3 minutes.

Leave the dough in the bowl (covered) until it has doubled in size for about 1 hour, then shape small bread buns and arrange them on a baking tray lined with baking paper.

Cover and let them rise, until they have doubled or tripled in size.

Bake the delicious buns in an oven at 450°F (230°C) for 20 minutes.
