Ingredients

  • rabbit - 1 pc.
  • onion - 1 onion
  • carrots - 1 pc.
  • liver - from the rabbit
  • spinach - 3.5 oz (100 g)
  • black pepper
  • salt
  • oil
  • rice - 2.5 oz (70 g)
  • butter - 3.5 oz (100 g)
  • rabbit broth - 1 jar
  • lettuce - 4 leaves

How to make

The rabbit is washed and salted well inside and out. Place it in glass pot until the filling is being prepared.

The onion is cleaned and finely chopped. The carrot is peeled and washed. It is grated. The liver is washed and finely chopped.

The spinach is washed and cut into strips. Heat oil in a pan. Add the onion and carrot to fry. The liver is added.

The rice is also added to fry. Season with salt, black pepper and adjust the saltiness of the broth.

Add as much of the broth as it is needed to cook the rice. Add the spinach. Mix everything.

When the rice is ready, stuff the rabbit. Pieces of butter are placed on it.

If there is left over broth, pour it into the glass pot or pour a little water. Roast for about 3 hours at 360°F (180°C).

When it is cooked on one side, it is turned over to cook on the other side as well. The stuffed rabbit is served on lettuce leaves.
