How to make
Soak the cleaned rabbit in equal parts water and vinegar for 1 night. The next day, drain well and dry it. Salt it inside and outside and grease it with oil. Chop the mushrooms, carrots and onions. Chop the pork into pieces, as if for skewers.
Combine all the ingredients together with the nuts, olives, raisins and cloves of cleaned garlic. Add some more oil and mix the stuffing with spices. Put the rabbit in a greased baking dish and fill well with the stuffing.
Distribute the remaining stuffing around the rabbit and pour in the wine. Cover the oven dish with foil and put it in to bake for several hours at a high temperature of about 440°F (225°C).
Finally, you can bake it without foil.
