Ingredients

  • rabbit - 1 pc.
  • rabbit offal
  • bacon - 5.3 oz (150 g)
  • butter - 3.5 oz (100 g)
  • rice - 3.5 oz (100 g)
  • onion - 1 onion
  • mushrooms - 9 oz (250 g)
  • tarragon
  • beer - 1 cup (250 ml)
  • parsley
  • paprika
  • black pepper
  • savory herb
  • oil
  • salt

How to make

Salt the whole rabbit.

Stew the chopped onion along with the rabbit offal and mushrooms in a pan with a little fat for a few minutes.

As soon as they soften, pour the rice inside and cover it with about 4/5 cup (200 ml) of water.

Flavor the stuffing along with the spices without the paprika.

Then stuff the rabbit with the cooled stuffing and sew up the opening using thread and a needle.

Make slits in the rabbit with a sharp knife and put pieces of salted bacon inside.

Put the stuffed rabbit in a clay pot (guvec), spread it with butter and paprika and pour the beer and some water over it.

Roast it at about 480°F (250°C) at first, then reduce the heat to 360°F (180°C).
