How to make
Cut the rabbit into portions and place in a pressure cooker. Submerge completely in water and boil for 20-25 minutes. Take the meat out, dry it and fry in very hot oil on both sides. Remove the meat pieces and fry the finely chopped onions, using the same oil.
Once the onions soften, add paprika and remove from the heat before it burns. In a clay pot, arrange the fried rabbit meat, the potatoes, that have been cut into cubes, the sliced carrot and the spices. Pour rabbit broth on and roast in an oven, at around 300°F (150 °C) for 100-120 minutes.
