How to make
2.6 oz (75 g) of muesli are grinded briefly in a blender. It should not be too fine, nor too coarse. They are mixed with the three types of flour.
Sugar is added to the dry mixture and the yeast is crushed. Mix well.
The water is heated slightly to body temperature. Pour the flour, add the salt and knead a smooth dough, by kneading for at least 5 minutes. It should not be too hard, nor too sticky.
Leave it to rise for 1 hour and 30 minutes in a bowl covered with cling film. It needs more time than usual because whole wheat flour has a harder time developing gluten.
The risen dough is shaped into an oblong loaf, spread with a little water, sprinkled with the rest of the muesli and cut lengthwise with a sharp knife. It is left in a tray covered with baking paper, until it rises once more and it doubles in volume.
The oven is heated to 430°F (220°C) with a fireproof bowl of water placed inside to generate steam.
The bread is baked for 40 minutes, once or twice after the 20th minute it is smeared again with water.
The muesli bread is left to cool on a wire rack and it is cut into slices.
