How to make
Dissolve the yeast in a little warm milk with a little sugar and flour. Leave it to rise in a warm place. Meanwhile, sift the flour.
Knead a dough from the flour, eggs (save one for spreading), sugar, milk, yeast and grated lemon peel.
When kneading, dip your hands in the melted butter. Knead, until the dough absorbs all the butter. Put the dough in a warm place to rise.
After the dough has risen, roll out part of it into a rectangle onto a floured surface and cut about 1 cm thick strips.
Wrap the strips around a greased cardboard roll wrapped in foil. The strips should overlap slightly.
Roll gently, so that the layers stick. Brush the rolls with beaten egg and sprinkle with sugar. Arrange the pastries on a baking tray lined with baking paper.
Bake the rolls in a preheated oven at 320°F (160°C) for about 15 minutes. When they are toasted, roll them while still warm in ground walnuts with sugar, cinnamon with sugar, coconut flakes or something else of your choice.
The Trdelník (Czech Chimney Sweet Cakes) is ready.
