Ingredients

  • pork - 2.2 lb (1 kg) boneless neck
  • onion - 1 onion
  • lemon juice - from 1 lemon
  • garlic powder - 1 tbsp.
  • curry - 1 tbsp.
  • paprika - 1 tbsp.
  • hot pepper - 1 tsp.
  • cumin - 1 tbsp.
  • turmeric - 1 tbsp.
  • black pepper - to taste
  • salt - to taste
  • parsley - 2 tbsp. finely chopped
  • olive oil - 4 tbsp (60 ml) + more for baking

How to make

Cut the pork into cubes suitable for stringing on a skewer and place them in a deep bowl.

Sprinkle with the lemon juice and olive oil and add all the spices. Mix well by hand to distribute evenly over the pieces of meat.

Cut the onion head into large slices and place between the meat to absorb the aroma. Wrap with cling film and leave it in the fridge for one or two days.

String the meat onto metal skewers and at the end of each one add pieces of onion.

Place them in a baking pan, which is generously greased with olive oil and bake at 360°F (180°C) in a preheated oven for 20-25 minutes.

This is an oriental type of skewer, which is very different in taste from the typical ones.

It can also be prepared on the grill, which will give an additional smoky aroma and an even better taste.

It is important not to overdo the cooking time, so that you don't dry out the meat, which, in general, after staying in this marinade, becomes very tender and nice.
