How to make
Prepare all the vegetables by finely chopping the onion and garlic and coarsely chop the carrot and the green pepper. Cut the mushrooms into large pieces, and peel the tomatoes and grate them.
Stew in the oil until soft - first the onion, pepper and carrots with a generous pinch of salt, and then add the mushrooms. Cook for 8-10 minutes on moderate heat and pour the brandy. When it evaporates, it's time to add the grated tomatoes and garlic. Mix well and fry for another 2 to 3 minutes.
Prepare the rice, which has been washed from the starch and measure the amount of water (1 part of rice - 2.5-3 parts of water).
Pour the rice and fry it for a short time while constantly stirring. Add the dill, half the parsley, black pepper and a little more salt and pour the water.
Cook the rice under the lid until all the liquid is absorbed - about 18 minutes (first on high heat and after boiling, reduce to medium to low). It depends on the type of rice, so keep an eye on it and if necessary, add a little more water until it is completely ready.
Let it rest for 5-10 minutes before serving.
Serve the portions of vegan dish sprinkled with freshly chopped parsley.
