Ingredients

  • lettuce - 7 oz (200 g) of tender leaves from the core
  • tomatoes - 1 pc.
  • cucumbers - 1 pc. small/medium
  • spring onions - 2 stalks
  • mackerel - 2.8 oz (80 g) fillets, marinated, canned
  • lemon juice - from 1/2 lemon (or by taste)
  • olive oil - 3 1/3 tbsp (50 ml)
  • salt
  • olives - 6 - 7 pcs.

How to make

Wash and strain the lettuce well. Cut it into thin strips.

Chop the spring onions along with the green leaves. Cut the tomato into large cubes and the cucumber into crescents.

Season the tomato slices with a little olive oil and salt and arrange them in the center of a large salad plate. Separately, mix the lettuce, onion and cucumbers and season them with the lemon juice, the remaining olive oil and as much salt as you like. Arrange them in a circle around the tomatoes.

Remove the mackerel from the tin and strain from the marinade. Arrange the fish fillets, slightly crumbled, on top of the tomatoes in the center of the salad. You can drizzle them additionally with more olive oil and lemon juice.

Garnish the fish salad with the black olives and serve.
