How to make
To make the honey cookies healthier and truly Vegan - we will use homemade honey from dandelions (ingredients: flowers, sugar, lemon and water), since real honey loses its beneficial properties after heat treatment.
In a deep bowl, mix the liquid honey, warm water (not hot) and sunflower oil, until the honey dissolves.
While we continue to stir with a wire whisk, add baking soda, cinnamon and both types of flour (whole grain and fine corn flour). Knead a soft and slightly sticky dough, which is kneaded with a little sunflower oil towards the end to make it smooth.
From the elastic dough, form balls and arrange them at a short distance, in a baking pan greased with sunflower oil.
Flatten them a little - just enough to get the thickness you want (because they don't change much in size during baking).
Bake at 360°F (180°C) for about 8-10 minutes, then remove the baking pan from the oven and spread each one with honey from dandelions - on top using a silicone brush.
Finish baking for about 5 more minutes at the same degrees, so that the oven bakes only on the upper heating resistor, since they quickly bake on the underside. After they are ready, in order to keep them soft, store them in a bag or box.
