How to make
Preheat the oven to 360°F (180°C) and grease and flour your cake tin.
Beat the eggs with the sugar in a bowl, until a fluffy and thick mixture is obtained. Add the finely grated citrus peel and vanilla.
Next up is the yogurt, the oil and finally the flour. It is sifted directly into the mixture along with the baking powder, by stirring gently with a wooden spoon, until it is completely absorbed.
Pour the sponge cake mixture into the prepared baking pan and place it in the preheated oven.
Bake the plain sponge cake for about 30 minutes or until it is fully baked.
Leave the baked sponge cake for 10 minutes in the tin, then carefully remove it and leave to cool on a wire rack.
Sprinkle it with powdered sugar (optional) and serve the plain yogurt sponge cake.
