Ingredients

  • quinoa - 15 tbsp. (with rounded tip)
  • red onion - 1/2 onion
  • garlic - 3 cloves
  • zucchini - 1/2 pc.
  • fennel - 1 head
  • brussels sprouts - about 15 pcs.
  • pepper - 1 pc. red + 1 yellow pepper
  • oil - 4 tbsp.
  • balsamic vinegar - 2 tbsp. or by taste
  • salt - by taste

How to make

Wash the quinoa well to remove the saponins. Then boil it until it's cooked for about 10-15 minutes. Strain it and set it aside. I used a mix of tricolor quinoa, but the dish can also be made with plain quinoa.

Prepare all the vegetables by washing and cleaning them well. Then cut them. The peppers, fennel and onions in strips, Brussels sprouts in halves, garlic in rings, zucchini in sticks.

Heat the oil in a large pan and fry the onion first. Add the remaining vegetables in the following order a few minutes after (1-2): fennel, Brussels sprouts, peppers, garlic, zucchini.

Cook, until they soften and aquire a light golden brown color, but they shouldn't be too soft, so that they don't fall apart. I like them slightly crunchy (especially the zucchini and somewhat the brussels sprouts).

If you want your vegetables to be very soft, you can steam them with a little water.

Add salt and balsamic vinegar and mix. It will add great color and flavor to the quinoa with vegetables.

Finally, add the strained quinoa, stir and serve it.
