Ingredients

  • gemelli pasta - 2 cups
  • peppers - 1 jar, roasted
  • pecorino - 2/3 cup grated
  • olive oil - 2 tbsp.
  • garlic - 2 cloves
  • onion - 1 onion
  • tomatoes - 2/3 of a tin
  • dry white wine - 1 cup
  • parsley - 1 bunch
  • salt
  • black pepper

How to make

Fill a pot with water, add salt and as soon as it boils, add the pasta. Boil for 9 minutes and strain it. Grind the roasted peppers in a blender.

Heat the olive oil in a saucepan and stew the chopped onion and garlic. Cook for 2-3 minutes and add the tomatoes.

After another 2 minutes, add the peppers, pour the wine and sprinkle with the spices. Stir and leave it on the heat, until the mixture thickens. Season the pasta with the resulting sauce.

Transfer it into a baking pan and sprinkle it with pecorino. Bake it with the top resistor wire on for a few minutes and serve it.
