How to make
For this broccoli dip wash and cut the broccoli into florets.
You can also use the stem, but first check if it is tender and if it is, peel it from the harder outer layer.
Cut it into smaller pieces so that it is cooked at the same time as the florets.
Boil the vegetable in lightly salted water, until it softens.
Strain and leave it to cool, then transfer it into a tall, narrow jug, which is suitable for a liquidizer.
Add the peeled garlic cloves, the lemon juice and if desired, a little salt.
Blend, until a smooth mixture is obtained and add a handful of walnuts, the white cheese, chili pepper and olive oil.
Place the liquidizer back into the jug and blend, until the mixture is perfectly smooth and fluffy.
After the delicious dip is ready, you can taste it and add more salt, olive oil, or lemon juice, if needed. Don't put too much salt in the beginning, because the white cheese itself is sometimes too salty.
I personally love this dip with more lemon juice and add extra.
Serve the Fluffy Broccoli and Cheese Dip with fresh basil leaves, carrot sticks or cucumber sticks, as well as crackers, whole wheat cracker sticks or crisps (or whatever you like).
