How to make
Turn on the oven to heat up to 360°F (180°C).
Finely chop the red pepper and the mozzarella cheese. The quicker option is to put them in a blender on medium speed to grind them together finely, but not into a pulp.
Beat two large eggs with the pinch of salt into a thick, fluffy cream. Add the milk, oil and finally the flour with the baking powder while beating at all times. For more fluffy cupcakes, you can sift the flour with baking powder beforehand.
If the mixture seems thick, add a little more milk, otherwise add flour.
Add the peppers and mozzarella with the lemon juice and parmesan and mix gently with a spatula, until a homogeneous mixture is obtained.
Distribute in greased porcelain soufflé or cream molds.
Place them in the preheated oven and bake for 20-25 minutes or until they're fully baked (time depends on the size of the molds).
