How to make
Pour the spelt flour into a bowl and add the olive oil, the lightly beaten egg whites and the two types of citrus juice, in which you have previously activated the soda.
Pour the coconut shavings, salt and sugar and mix well with a spoon. The dough does not become thick and does not need to be kneaded, but still, if it seems not thick enough, sprinkle additional spelt flour. The biscuits should be able to be shaped easily with a spoon, but they should not be runny.
In a wide tray covered with baking paper, place a spoonful of the dough at a distance from each other and form a round biscuit with a thickness of 4-5 mm. Sprinkle with more coconut, if desired.
Place it in an oven heated to 360°F (180°C), until they aquire an appetizing color and start smelling nice - about 16-17 minutes, it depends on the oven.
When you take the biscuits out, they will still be soft, but then they will harden slightly and be nicely crunchy. Easy, healthy and delicious - the perfect company for any cup of coffee, tea or milk!
