How to make
Clean, wash and boil the potatoes. Leave them to cool and grate them on a coarse grater.
Put 150 g of butter in a heated pan and fry them, until they aquire a golden color. Add the grated potatoes and stir with a wooden spatula, until they absorb all the fat.
Pour the potatoes into a baking pan. Season them with a little salt. Add 12 oz (350 g) of coarsely grated cheese, 2/5 cup (100 ml) of milk and 2/5 cup (100 ml) of cooking cream.
If you wish, you can add spices. Mix the mixture well and smooth it out.
Make wells with a spoon, by trying not to reach the bottom. Crack an egg into each well.
Sprinkle the Smolyan-Style Eggs with paprika and bake the appetizing nests in a preheated oven at 360°F (180°C) for 20 minutes.
