"A wonderful sauce, which you can serve with chicken, duck, turkey!"

Ingredients

  • blueberries - 9 oz (250 g) (fresh or frozen)
  • pineapple juice - 2/3 cup (150 ml) or orange
  • brown sugar - 3.5 oz (100 g)
  • brandy - 1 2/3 tbsp (25 ml)
  • cinnamon - 1 stick
  • black pepper

How to make

Place the pineapple juice along with the sugar in a suitable pot on the stove to heat up, until the sugar dissolves.

After the juice has reduced for 2-3 minutes, add the cleaned blueberries.

Boil over moderate heat and stir for about 10 minutes or a little longer. Once the blueberries have popped, add the cinnamon, brandy and sprinkle some black pepper.

Cook for another 5 minutes and keep stirring. Remove the pot from heat, remove the cinnamon.

Serve the blueberry sauce with poultry dishes.
