Ingredients

  • turkey breast - 1.8 lb (800 g) in pieces about 5 - 6 cm
  • bacon - 4.2 oz (120 g) chopped
  • black pepper - freshly ground
  • salt - to taste
  • thyme - 1 sprig
  • soy sauce - 3 tbsp. (you can skip)
  • Blueberry Sauce
  • blueberries - 10.5 oz (300 g)
  • thyme - 1 sprig
  • salt - 1/4 tsp.
  • shallots - 1
  • maple syrup - 1 tbsp. (you can skip)
  • olive oil - 1 tbsp.
  • balsamic vinegar - 2 tbsp. (if you like more blueberries, add another 1 tbsp.)

Blueberries have the right acidity and pectin, which makes them great in both sweet and savory dishes. They pair especially well with thyme—and that's why this easy Turkey Bites Sauce can be a delight.

Turkey fillets with bacon are a very successful combination. The delicate flavor of the turkey breast complements wonderfully with the more intense flavor of the bacon. The result is a dish that embodies the harmony of flavors.

Start by cutting the turkey breast into pieces. In a bowl, marinate the turkey pieces for 20 minutes with soy sauce for chicken, about 2 tbsp. and black pepper, thyme, mix (if you don't have soy sauce, marinate with salt, black pepper and a little thyme). Wrap each piece of turkey in a slice of bacon. You can use a toothpick if necessary to secure the bacon better.

Place the turkey pieces with bacon in a preheated pan with equal amounts of butter, olive oil and a sprig of thyme. Cook the turkey pieces over medium-high heat until golden brown on each side. This usually takes 3 minutes per side - a total time of about 8 minutes for the whole process of preparing the turkey bites.

Remove them to a suitable plate and cover with aluminum foil. Place the pan in which we cooked the turkey pieces back on the stove over medium heat.

Add the shallots and thyme and cook, stirring constantly, until the shallots begin to brown, 30 seconds to 1 minute.

Add the blueberries, vinegar, and 1/4 teaspoon salt, continuing to cook, stirring occasionally and scraping up any brown bits, until the blueberries burst and release their juices and the mixture is thick and syrupy, 4 to 5 minutes (sometimes I add 1 tbsp. maple syrup at the end of cooking, try it, it's very tasty).
