How to make
Put the water with the sugar on the stove. Once it boils and the sugar melts, remove it and leave the sugar syrup to cool.
Wash and dry the pear. Cut it into thin slices without peeling it and removing the seeds. By hand it would be difficult, so use a cutting machine. Drizzle them with lemon juice to prevent them from oxidizing and darkening.
Dip the slices into the cooled syrup and leave them for 10 minutes (it's very important not to put them in boiling or hot liquid, as they will fall apart and become mushy).
For a perfect result, you will need a silicone base, which is suitable for an oven (see pictures), if you don't have one, any silicone mold or tray will work, as long as it is wider and can accommodate the pears. Never use baking paper, because it will stick.
Strain them carefully and arrange the chips on the silicone surface. Bake/dry in a 210°F (100°C) oven for an hour and a half, then turn off the oven and leave them inside to cool. It's best to leave them like this overnight.
Use the chips as a crunchy treat both on their own and as a beautiful addition or decoration to various desserts and creams.
