How to make
Place the lemon peel and chia seeds in a blender and blend on high speed for seconds.
Add the boiled white beans (well strained), the spices, baking powder, onion and garlic and turn the machine back on for a few seconds to blend everything, so that a thick homogenous mixture is obtained.
Form about 12 bean patties and leave them for 5-10 minutes, so that the chia can absorb the moisture.
Fry them in heated oil, until they aquire a slightly golden color on each side. Note that if you fry them at a lower temperature, the patties may fall apart.
Remove and place them onto kitchen paper, so that it can absorb the excess fat.
For the gorgeous sauce to go with your patties, mix the yogurt with the mayo, lemon juice, salt, grated garlic, parsley, chia seeds and lightly toasted sesame seeds.
Stir well.
Serve the delicious bean and chia patties with a gorgeous sauce and enjoy.
