How to make
Cut the potatoes, onion, pumpkin and carrots into medium-sized pieces.
Place them in a pot and add the tomato, peeled and halved, the cauliflower, cut into small pieces and the clove of garlic, whole or halved. Finally, add the whole parsley stalks.
Pour the vegetables with 3 cups (700 ml) of water, 1 tbsp. salt and boil (simmer) under a lid for 25 minutes.
Add the diced butter, pour the olive oil and liquidize, until a smooth mixture is obtained. If desired, it can be diluted with a little more water.
The vegetable soup is seasoned with black pepper and more salt (if needed) and served hot with crunchy croutons or crackers.
