Ingredients

  • spelt flour - 7 oz (200 g)
  • wheat flour - 1.8 oz (50 g) + for sprinkling on the kitchen counter and kneading
  • ayran - 2/3 cup (150 ml)
  • vinegar - 1 tbsp.
  • baking soda - 1 tsp.
  • salt - 1 tsp.

How to make

Sift the two types of flour into a bowl, make a well and pour the water into it, pour the vinegar over it and when bubbles form, pour the ayran, in which you have previously dissolved the salt.

Knead a soft but non-sticky dough, by sprinkling a little of the white flour, until it stops sticking.

The dough should not be kneaded for a long time, so that it doesn't neutralize the leavening effect of the soda.

Form the bread and turn on the oven to heat up to 360°F (180°C) and in the meantime, leave the dough to rest.

Bake for 30-35 minutes, or until it is fully baked and make sure not to open the oven before the 20 minute mark.

Cool it on a wire rack and serve it with your favorite dish.
