"Whole grain bread that proves homemade food tastes better"

Ingredients

  • water - 8.5 fl oz (250 ml)
  • spelt flour - 12.5 oz (350 g) + for additional kneading
  • white flour - about 3.1 oz (90 g)
  • flaxseed - 1.8 oz (50 g) crushed
  • flaxseed oil - 1 1/3 tbsp (20 ml) + for spreading
  • salt - 1 tsp.
  • sugar - 1 tsp.
  • fresh yeast - 0.9 oz (25 g)

How to make

Make a mixture from the water, white flour, yeast and sugar. Let it activate for 5-10 minutes.

In a bowl, mix the whole grain spelt flour with the crushed flaxseed and the salt. I personally don't add any salt to this whole grain bread, but you can add as much as you like.

Make a well in the middle and pour the activated mixture and flaxseed oil.

Knead a smooth, not too hard dough. It must be well hydrated so that the bread does not become hard.

Add more liquid or flour to get the desired softness and elasticity of the dough.

Shape the healthy loaf and let it rise on a baking tray lined with baking paper for 1 hour or until it has tripled in size (or at least doubled in size).

Bake at 340°F (170°C) for about 30 minutes and then increase the degrees acquire a golden color.
