How to make
Put the sugar, honey and the softened at room temperature butter in a bowl. Beat with a mixer, until a smooth cream is obtained. Add the egg and continue beating for another 5-6 minutes.
In a small pot, pour the cream and add the broken dark chocolate. Melt it in a water bath. Pour it in a thin stream into the prepared mixture.
Sift the flour with a pinch of salt, the baking powder, the cocoa and the vanilla. Add them in portions to the liquid mixture.
Homogenize well. Wash and dry 3 well-ripened pears. The most suitable are the William variety.
Line an oblong cake tin with a piece of baking paper. Pour the sponge cake mix.
Place the pears in it, by pressing them lightly, so that they sink in halfway.
Bake the sponge cake at 360°F (180°C) in a preheated oven for about 35 minutes. Check it with a wooden skewer to see if it is fully baked. Remove the baked sponge cake and cool it onto a wire rack. Melt the white chocolate in a water bath. Pour it over the cooled sponge cake!

Note: The sponge cake can also be made with pears, which are cut into small pieces. Before putting them in the mixture, lightly sprinkle them with flour!
