"Homemade rye bread - a recipe you should have in your cookbook"

Ingredients

  • fresh yeast - 0.4 oz (12 g)
  • sugar - 0.2 oz (5 g)
  • salt - 1 tsp.
  • rye flour - 11.5 oz (320 g) whole grain
  • water - 1 cup (250 ml)
  • olive oil - 2 tsp (10 g) + for spreading
  • white flour - 3.5 oz (100 g)

How to make

Mix the yeast, sugar, 1/3 cup (85 ml) of water and white flour in a bowl. Leave it in bowl, covered with foil, to activate for 10 minutes.

Add the olive oil, salt, remaining water and rye flour to it. Stir with a spoon. The dough should be medium soft.

You can knead the dough with a mixer with dough stirrers. Leave the dough to rise in a greased mold. If you want, divide the dough to make two rye bread loaves.
