How to make
Dissolve the yeast and sugar in the warm water, add a few spoons of flour.
It is left for the yeast to activate. Add olive oil, salt and a little bit of flour, corn flour and then white flour to the frothy mixture, until you get a nice, smooth, non-sticky dough. Let it rise.
The finished dough is shaped into a bread loaf, placed in a rectangular cake tin and left to rise again.
The well-risen cornbread is placed in an oven, at the bottom of which is placed a container of water and baked at 360°F (180°C) until done.
