Ingredients

  • corn flour - 9 oz (250 g)
  • white flour - 4.6 oz (130 g) of durum wheat
  • water - 9.1 fl oz (270 ml)
  • salt - 1 tsp.
  • fresh yeast - 0.5 oz (15 g)
  • oil - for greasing the hands
  • Sourdough
  • flour - 4.2 oz (120 g)
  • fresh yeast - 0.35 oz (10 g)
  • water - 5 tbsp (75 ml)

How to cook

First prepare the sourdough. Knead the flour along with the yeast into a small ball of dough. Put it in a bowl of warm water and wait for it to appear on the surface - about 15 minutes.

In another bowl, mix the white flour with the corn flour, add salt and pour the slightly warmed water.

Add the fermented sourdough and gradually knead a soft dough. If necessary, add more flour.

Knead for 10 minutes to make the bread better. Shape it and put it in a baking pan, which you have sprinkled with corn flour. Sprinkle it on top as well.

You can make several cuts on the surface of the bread. Leave it to rise in a warm place for an hour.

Preheat the oven to 480°F (250°C). Bake the bread for 10 minutes, then reduce the heat to 370°F (190°C) and continue baking for another 30 minutes.

Sprinkle the walls and bottom of the oven with water from time to time - this way the bread will obtain a nice crust.

Cool it on a wire rack and wrap it with a towel for a few minutes.

The cornbread with yeast is ready.
