"How many pieces of quince and walnut cake can you eat? We dont believe, that they can be more, than the ones we ate so far"

Ingredients

  • eggs - 3 pcs.
  • sugar - 7 oz (200 g)
  • flour - 9.2 oz (260 g)
  • yogurt - 6 tbsp.
  • olive oil - 6 tbsp. (or sunflower oil)
  • salt - 1 pinch
  • baking powder - 2 tsp (8 g)
  • quinces - 1 large quince
  • walnuts - 3.5 oz (100 g) chopped
  • brown sugar - 3 tbsp.
  • lemon juice - 2 tbsp.

How to make

Crack the eggs into a bowl, add the sugar and beat with a mixer, until a fluffy mixture is obtaind.

Sift the flour with a pinch of salt and the baking powder. Add it to the egg mixture in portions.

Pour the olive oil and yogurt. Homogenize the mixture. Grate the quince, sprinkle it with 2-3 tbsp. of lemon juice and sprinkle with brown sugar.

Stir well. Add it to the cake mixture. Add the coarsely chopped walnuts.

Line a 24cm detachable cake tin with baking paper. Pour the mixture and level it out.

Bake quince cake at 360°F (180°C) in a preheated oven with a fan for about 40 minutes.

Leave it slightly moist. Cool the baked quince cake on a wire rack and sprinkle it generously with powdered sugar.

The most flavorful and juicy cake I've ever made! I highly recommend this quince and walnut cake!
