How to make
Start by boiling the two types of potatoes and the carrot, it is best to boil them separately, by cutting the potatoes into cubes to reduce the time.
When the products are well softened, put them in a blender along with the grated white cheese, soft butter, parsley, salt and black pepper. Everything is blended, until a homogeneous mixture, which is as smooth as puree, is obtained.
Form vegetable patties and place them on a tray lined with baking paper, which is also greased with oil or butter. Bake very briefly, until a light crust or golden color forms on the surface.
Sauce:
Place all ingredients in a large bowl and blend gently with a blender, until they are well mixed.
Garnish:
In a heated pan, put 2 tbsp. of oil and 1.1 oz (30 g) of butter. Stew the vegetables, until they soften.
Serve the potato patties drizzled with the sauce.
